Homemade Meat Alternatives

By making your own TVP sausage you can leverage single ingredients, control the amount of salt you want and change up the flavor. Add Italian spices for to use in stuffed shells or lasagna, or use Cajun seasoning to add in to red beans and rice. The spice combinations are endless!

Vegan Ground Sausage with Italian Flavors

I made this as more of a classic ‘Italian’ sausage by using Italian seasonings, but you can use Cajon seasoning for a spicy sausage, chili powders for a Mexican sausage, or fresh herbs for a sage sausage… whatever you are in the mood for!

They key is to mixing the spices into the TVP before you add the water – that way when it is ready to bake, all those flavors are already in the sausage and will pop in the oven. This was fantastic in myCreamy Vegan Zuppa Toscana!

What Is Textured Vegetable Protein?

TVP (Textured Vegetable Protein) are small bits of soy protein, which has a very similar texture to ground beef. Because of this, TVP is really versatile to use in place of real meat, and you can spice it however you like. We use TVP in soups and stews, for taco filling, and in lasagnas. TVP is a great pantry-staple protein, and always keep a few bags of TVP on hand.

How Do I Make This TVP Sausage?

  1. Preheat the oven to 400 degrees Fahrenheit.
  2. In a large bowl, add the TVP and hot water.Cover for 10 minutes until the TVP has absorbed all the water.
  3. Add the onion powder, paprika, and Italian seasoning.Stir well to combine.Add the breadcrumbs and/or flax egg if using.
  4. Place mixture on a sheet pan lined with parchment paper, in an even layer.Bake for about 15 minutes until mixture becomes dark brown on top and begins to crisp.
