ONE POT Kielbasa & Onion Pasta
If you are a fan of the One Pot Dinner Recipe like I am, this one is going to be perfect for you and your busy family. Not only is it a one pot meal, it is quick, easy and full of hearty ingredients that will fill up and satisfy even the pickiest of eaters.
When I put this recipe together, I was trying to use up items I already had in the pantry. It was time to put together our Menu Plan for the week, and I wanted to use up what I already had before bringing in more groceries.
As soon as I took the first bite, I knew I had to share how I made it with you guys. Since you all loved the Crock Pot Pierogi Casserole with Kielbasa, I just knew you would love this one too! The flavors were outstanding. Spicy kielbasa (you can use Polish Sausage if you are not a fan of the spice) and a creamy cheese sauce all cooked together with whatever pasta you have in your pantry make this one pot dinner recipe very satisfying.

One Pot Dinner Recipe Kielbasa and Onion Pasta!
Ingredients:
- 2 Tablespoons oil
- 1 large onion – chopped
- 1 14 oz package smoked kielbasa sliced into coins
- 2 cloves garlic – chopped
- 4 cups chicken broth
- 2 10 oz cans petite diced tomatoes (do not drain)
- 1 cup whole milk (use a whole milk substitute if you’re in a pinch)
- 1 Tablespoon chopped parsley
- 1 16 oz. box penne pasta
- 1/2 cup mozzarella cheese
- 1/2 cup parmesan cheese
- salt & pepper to taste
Directions:
In a deep skillet (I used my 12-inch electric skillet) on medium heat, heat the oil. Once the oil is hot, saute the onions and kielbasa. Until the onions are translucent and the kielbasa has a nice crust around the edges.
Add in the garlic, stir and cook for a minute or two until soft. Be careful not to burn it.
Pour in the chicken broth, diced tomatoes, milk, parsley, and pasta. Cook until the pasta is al dente. Stirring often so it doesn’t stick to the bottom of the skillet.
Once the pasta is al dente, season with salt and pepper to taste.
Top with both types of cheese.
Remove from the heat and put a lid on your skillet. Just to help melt the cheese.
Serve with crusty garlic bread to sop up all of that flavorful sauce!
Not a fan of Kielbasa? This recipe can also be made with chicken, pork or even bacon if you like!
