Kimchi is a traditional Korean side dish of salted and fermented vegetables, such as napa cabbage and Korean radish. A wide selection of seasonings are used, including gochugaru, spring onions, garlic, ginger etc. Kimchi is also used in a variety of soups, stews and rice dishes. Fresh kimchi can be used as a salad too.
It can be prepared using normal cabbage which is easily available in Indian markets. It can be stored in the refrigerator for a few days. It is a delicious side dish prepared using a few ingredients.

- 500 gm cabbage
- 1/2 cup spring onion cut into 1inch pieces
- 1.5 tbsp salt
- 2 tsp finely chopped ginger
- 2 tsp finely chopped garlic
- 2 tbsp soy sauce
- 1/4 cup vinegar
- 2 tsp sugar
- 2 tsp chilli flakes
- 2 tsp red chilli powder
- 2 tbsp sesame oil
