It’s kind of ironic that I’m sharing a recipe with you that has both “french toast” and “oats” in the tile.

I’ve talked about this before, but I feel it’s worth mentioning again. I sort of have a love/hate relationship with french toast. It’s a dish that I hardly ever order at a restaurant, as it’s not my favorite breakfast. But, once in a great while, a craving sets in and I just have to have french toast. Know what I mean?

And I’ve come to love it just a little bit more over the years. Specifically with this Banana Caramel French Toast Bake and that Blueberry Cheesecake Stuffed French Toast. If you jazz it up and serve it as a casserole or in dessert form, then I’m all about french toast.

Now, let’s talk about oats. I like oatmeal a lot better than I used to, but I still have to be in the mood for it. But overnight oats? I adore those!

I could eat this nutella version or that cherry pie version just about every week. I love the creamy texture and sweeter flavor much better than regular oatmeal.

  • I made my overnight oats with blueberries, but any fresh berry will work.
  • You’re welcome to use frozen blueberries, if desired. Stir them straight into the oat mixture, no need to thaw them first as they’ll thaw overnight in the fridge.
  • If you don’t have almond milk on hand or are allergic, feel free to substitute your milk of choice.

Ingredients

  • 1 cup old-fashioned oats
  • 1 cup Blue Diamond Almond Breeze Almondmilk Original Unsweetened, (or milk of choice)
  • ½ cup vanilla Greek yogurt
  • ½ teaspoon ground cinnamon
  • Dash of nutmeg
  • ¾ teaspoon vanilla bean paste, (or vanilla extract)
  • 1 tablespoon pure maple syrup
  • 1 cup fresh blueberries

Instructions

  • In a small bowl, mix together oats, Blue Diamond Almond Breeze Almondmilk Original Unsweetened, yogurt, cinnamon, nutmeg, vanilla extract, and maple syrup. You can also stir in blueberries, if desired, or wait to use as a topping just before eating.

  • Pour into a mason jar or airtight container with lid. Refrigerate for at least 4 hours, or preferably overnight, so that the oats will soften and absorb the liquid.

  • Remove from refrigerator, stir, and top with blueberries and a sprinkling of brown sugar, if desired.
