These sweet baked acorn squash are the perfect side dish with any meat and so simple to make with just 3 ingredients!

The buttery filled cavity is so delicious and you can also add some other suggestions below to change them up, we love them with diced apples, raisins, and nuts!

Perfect for a side dish, drenched in a buttery cinnamon sugar sauce.

Acorn squash is in abundance all winter long, so if you haven't tried this sweet squash you're in for a real sweet treat!

Easy Side Dish

One of my very favorite ways and serve ways acorn squash and it's such a great side dish!

The cavity is baked on a cookie sheet with a buttery cinnamon sugar sauce and makes its own glaze in the oven in around 45 minutes!

Serve these with roasted chicken, pork chops, steak, ham, or perfect around Thanksgiving with that delicious bird!

I really love baking them on foil or parchment paper it makes cleanup is a breeze!

The acorn squash can be served as is or scooped out and placed in a casserole dish mixed together with the butter (we prefer to give one to each person, it's so pretty!)

Simple Ingredients You Will Need

  • acorn squash
  • butter
  • cinnamon
  • brown sugar
  • butter
  • Optional:
  • salt and pepper to taste.

Other Additions and Tips

  • pecans
  • honey instead of brown sugar
  • nutmeg and ginger on top
  • filled with fresh finely chopped apples
  • raisins or craisins
  • a mixture of apples, pecans, and raisins are a wonderful addition
  • microwave the squash for a few minutes it's easier to cut in half (use a potholder to remove they will be very hot)
  • scoop out all the stringy parts and seeds
  • if you're in a hurry you can just add brown sugar, cold butter, and cinnamon to each one I find it easier to fill each cavity melted together
  • bake until the glaze is caramelized and a fork goes through the squash easily

Baked Cinnamon Acorn Squash

Easy baked acorn squash with cinnamon and butter coating while it bakes a sweet delicious side dish all winter long.

Ingredients

  • 2 - 1/2 tablespoons dark or light brown sugar
  • 4 tablespoon butter melted
  • 1 - 1/2 teaspoons cinnamon or more to taste
  • Optional: salt and black pepper to taste
  • Mix those three ingredients and set aside.
  • 1 Acorn Squash see below for instructions
  • Note: you can also double this recipe for each side if you would love more butter-sugar cinnamon sauce

Instructions

  1. Easy slicing method for acorn squash:
  2. Microwave the acorn squash for 5 minutes on the highest temp it goes.
  3. Remove from microwave with potholders.
  4. On a cutting board using potholders, slice the acorn squash in half.
  5. Remove the seeds with a spoon and all the stringy insides and discard.
  6. Place the acorn squash in a deep baking pan on foil or parchment paper with the cavity side up.
  7. Fill each cavity with the cinnamon butter mixture.
  8. Bake at 400 degrees until it's caramelized around 35 minutes to 45 minutes depending on how big the squash is.
  9. Note: this is great with butternut squash also or sweet potatoes.
  10. Remove from oven and cool down until it's just warm ( the syrup is very hot) before eating.
  11. Optional Additions:
  12. pecans
  13. honey instead of brown sugar
  14. nutmeg and ginger on top
  15. filled with fresh finely chopped apples
  16. raisins or craisins
  17. a mixture of apples, pecans, and raisins are a wonderful addition
  18. Just add any of the additions in with the cinnamon butter mixture.
