Our apple amber recipe is another Irish treat made from apples, and it has long been a favorite traditional Irishdessert.

Almost every Irish farm boasts atleast a few apple trees. Before the pagan Irish were converted to Christianity,apples were thought to be under the protection of Brigit - a powerful Celticgoddess.

And according to the laws of thetime, anyone who damaged someone else’s apple tree was required to compensatethe tree’s owner by transferring ownership of several cows.

So, while we know there are multiple apple-based desserts in our menu, apples have a special place in Irish culture, and frankly, each of these desserts is too delicious to ignore!

Meanwhile, here’s a recipe for Apple Amberwhich has always worked well for us. It serves 4 to 6.

Apple Amber Recipe: Ingredients

  • 1 pie shell for the bottom crust
  • 1 lb. cooking apples, cored, peeled and grated
  • 3 large eggs, separated
  • 4 oz. sugar (or to taste)
  • 2 tbsp. water
  • Juice from 1 lemon, strained (could substitute cidervinegar)

Preparation

Preheat oven to 350 degreesFahrenheit. Place pie shell in pie pan and set aside. Put water into small,heavy pot and bring to a boil on the stove.

Add grated apple and cook overmedium heat, stirring occasionally until a puree forms (some texture in thepuree is fine). Remove from heat.

Beat egg yolks slightly; add lemonjuice and 3 oz. of sugar to the apple puree, then blend in the beaten egg yolksand stir well. Spoon into the pie shell and bake 20 minutes.

While baking, make a meringue bywhisking the egg whites and gradually adding the remaining sugar, until stiffpeaks begin forming.

Remove the pie from the oven after20 minutes and spread meringue over the top evenly. Bake another 10 minutes tobrown meringue. Serve this tasty Irish dessert recipe warm or chilled.
